Frank is correct in that there are a lot of variables that come into play. It makes good sense for your engine guy to flow those heads. I am not all that familiar with conventional 24 degree big block heads. My point in asking that was that you do have a decent set of head on that motor so just being a 598 with ok heads it shoul make decent torque. Bigger runner volumes does not always mean more power. There are so many things that come into play. However if you look on Darts web site it appears there are minimal differences between the 345 as they sell it and the 360 as they sell it at least to me I could be missing something though. If your engine builder is telling you to keep them he must feel they will work better with your combination. Although it seems that .900 lift is an awful lot for a bracket motor. at least to me

Other things to consider that will make huge differences are

What gear are you running. depends on the weight of the car and at what rpm you hope to go throgh the traps

Converter stall speed will also be important. Do you allready have a convereter. If not it would be worth calling reputable company and giving them your engine and car specs. Having a converter built for your combination can be worth several tenths. This I do know from experience. I dont know if you have a company you usually use but If you allready have a converter I know trans specialties will cut it open and set it up to your combination even if its not there convereter for a pretty reasonable price.

Good luck although you probably won't need it. Sounds like a 7.3 or maybe faster combo to me
