Theoretically you should be able to wet sand and polish Sunday or Monday (2-3 days after spraying). That all depends on the paint, if it is still "green" or rubbery then it is not ready yet. We bake all of our refinishes and base/clear we can polish about 3 hours if need be once out of the booth, we usually wait until the next day. The single stage we use actually needs about 2-3 days before we even consider wet sanding and polishing, because even though it has been baked (160 degrees for 25 minutes) it still has the rubbery feel to it (slightly sticky to the touch). The semi gloss or flat finishes need about 5 days to cure before they are handled regardless on if they have been baked or not. For reference sake we use Sikkens products, I don't know what you are using.
