Other than switching to air (I don't care for either, but they do work) You might try raising the stop RPM so you aren't coing off with such a big throttle hit....although that will lengthen the time on the stop and may hurt mph a little. Some suspension tweaking might help as well to try to keep the rear tires loaded and stuck to the track.....

I've been daydreaming about doing this for a while. When I was doing engine development for a forklift manufacturer we used dashpots as an "idle up actuator" to mechanically kick up the idle in response to a loss of vacuum. Somewhere I still have some of those prototype dashpots, I've thought about using them with a needle valve regulating the flow out of it.
