I just did a Holley system on an LT1 car. It took very little to get the car running well.

I'm using Holley. I found it to be very user friendly. There was a pre-built LT1 tune in the Holley software that I started from. To be fair I've not used FAST.

I’m a fan of FAST and would recommend them to anybody.
The FAST tech support is second to none and they’ve helped me in person at the track and via phone/email multiple times. I think both companies have a good product and can’t knock either one. From experience, FAST has been great to me. Call Matt Maxwell at FAST and he can help with anything you need.
