We can assume that you would want to increase the valve reliefs substantially,as ANY lift lift is legal in SS. Therefore, they would hold quite a few more cc's than stock. Now you can decrease the original dish height to compensate.

OEM 360 pistons have no reliefs to begin with, so, yes, they would make up for the shallower dish.
Over the years, several intakes were extensively modified to work with a TQ, including LD 340, Offenhauser Port-O-Sonic (with popsicle sticks) and the Holley Strip Dominator.
