Then you could guarantee that people would be there to park on Thursday or even Wednesday.
With a Saturday-Sunday race, a much smaller number of people would have to miss some (if any) work days.
The only reason we're doing our $5K-$20K-$5K Footbrake race as Fri-Sat is because we're on Thanksgiving weekend, and the holiday allows us to have the best of both worlds with more travel time on Thursday/Friday, AND a rain date/travel day Sunday.
