Look in your software and see it the sensor is even being used to modify Fuel or Timing. Most people simply log the output of that sensor and don't use it for any other reason.
If it is being used, then you need to see what it is modifying to see if it can change fuel/timing during a pass should you decide to ice down the intake.
If you do ice down the intake and that sensor is mounted out in front of the TB which is typical, then that sensor will not see the cool manifold. IF you are setup to run closed loop then it won't matter. If it isn't, then you could be leaving some power on the table, most likely could have added more fuel to go along with the cooled intake.
I use them to see the air temp drop during a pass, it does nothing to the tune on either of my cars. I do run closed loop with a 2% limit. Not sure if I could get to the upper limit if I iced the manifold, never tried.
