A lot of the neat ones, such as a 440 six pack Dart, and a 64/65 Chevelle 409, have already been mentioned.

Instead of trying to shoehorn the SOHC 427 in a Mustang, put it in a "taxi cab" trim version of the 67 Fairlane.

Or a Falcon with a 427 Tunnel port.

1969 Chevelle, 427/430 with aluminum heads.

1970 GM X body cars from all Buick, Chevrolet, Oldsmobile, and Pontiac (yeah, they didn't all have X body cars in 1970), with the top of the line 454/455 engines from the appropriate manufacturer, in "stripper" trim, with rubber mats, light seats, no air, etc. A Stage I 455 Apollo? A 455 Ventura? A W-30 Omega? Cheap, unusual, and quick. Real sleepers, too.

The 70 1/2 Camaro with the 454 LS-6 (and make the LS-6 available across the board with the L-89 aluminum head option).

For something bizarre but fun, a real hot rod 292 version of the GM OHC 6 cylinder, with a 3x2 carburetor setup and a 4 speed, in something light, say a 66-67 Chevy II.

The 67 Z28 302, in a 67 Chevy II.

Two Q-Jets on a high compression 500 Cadillac with a big cam, in a Coupe de Ville, with a switch pitch 400 turbo, and a 4.11 gear.

A 409/425 in a 64 Chevy C-10 short bed step side, sort of like the "wannabe" 1990 454 SS pick up, but with a REAL hot rod engine.

A 350 TPI from an 87 Camaro, in an 87 Monte Carlo SS, with a 5 speed.
