You might look into Jim Johnston's S/S Chevelle, It's priced right as a entry level car and probably wouldn't take much to convert to a stocker if you have your heart set on running stock.
If you have any interest in doing a Mopar I know of a couple Aspens that are available locally, 1 wagon and a 2 door. My wagon has gone 11.80s with the 360 that was built in 1993 and I haven't touched the short block since. .
Knowing your driving style I would suggest you look into buying a done A-D car though. Cost more to get into but if you don't like the racing you wont lose to much when you sell. Or maybe build that 56 you have? There are guy's on this forum that have the engine parts you would need for it.
