This is what testing is for. All data available should be used dyno sheets are helpful, actual full pass data logger recorder, weather, track conditions and time slips is best. Once you feel or hear the car nose over you have peaked, and momentum will carry you a bit further and than that’s it. At that point the mass is just maintaining speed no more acceleration. We are striving for best ET not mph. As far as gear change torque should be at least equal to or higher from when ratio to the next that’s were a dyno sheet helps and gear ratio calculator helps for maximizing acceleration time. Have fun and if something breaks time to go back to the drawing boards.
