I thought in stock the pistons had to be left alone and as they come from the manufacturer and be on the approved piston list. I am new to this stock eliminator stuff. So forgive me if I missed a rule change or something.

You are allowed to resubmit a piston for approval, or have a piston made with a different weight as long it meets the NHRA assembly weight requirements.
