I agree sheet cake is the way to go - I've seen that cake done that way and its just as good, not as pretty but more efficient for feeding multiple people with it. Easier to transport as well.

We have one eclair cake complete and two of the three layers of the Strawberry dessert complete - one more to go. We just turned on our air conditioner today (believe it or not) and it's taking a while for the house to cool down, I'm freaking hot as heck. Glad I picked minimal oven required desserts.
Anyhoo, I've got to hear the "mean" pasta salad story. Sounds interesting... |

Jamie made some pasta salad at Kinston a couple of years ago, and lets just say it didn't turn out so well. I am pretty sure she ended up throwing it away it was so bad. Just giving her a hard time. =) In her defense it was one of those pasta salad kits. Oh, and one Hershey Bar cake ready to go, and I didn't even burn it.

OH those kits are nasty - I made one before and wasn't impressed at all - all the veggies in there are like freeze dried or something.
I also managed to complete two desserts without any major disasters. I remember the first time I made the strawberry dessert one I ended up messing it up bad and had to start all over. |

Dear Angela,
Thank you very much for the eclair and strawberry cakes at the track Friday. Everybody I talked to, (who found them behind the tea dispenser), loved them! Too bad there wasn't more to go around. I heard Beard hung around for seconds then licked the pans clean when the last pieces were gone! We'll have to talk to Hillarey about the Hersey cake. She was busy making time runs so maybe she still has it hidden at the trailer! (Unless Beard got to it and didn't tell anyone!) ...and thank you for the good food Herbie! That was appreciated too!
