Common practice is to use a rim about as wide as the tread. A lot of Stockers use 9" tires on 10" rims.
Too narrow of a rim and you have to use less air pressure to get full-width tread contact. But then the tire will want to wad-up more and could distort the tread area, punish the sidewalls more and possibly be less stable on the top end. I'm not saying it won't work and some probably have done it, but I'd prefer not to. Each car/combo is different as to what works best or what you can get away with.
