Any experience towing 36-40' Goosenecks with a single wheel truck? Bad idea or ok?

I have a 36' GN (about 11K #) that I tow with a 2006 Duramax 2500HD and do not experience any instability. I haved towed it from Texas to Vegas, AZ, CA, KS, INDY and back. I get about 10 MPG towing at 70ish.

Single wheel will work, dual wheels will work better.
