Most accurate way to know how much to mill is to assemble the valves in the head, set it with combustion chamber up on a stand or braced so that the surface is perfectly level. Then pour the amount of combustion chamber volume into each chamber and measure to the surface of the liquid with a depth mike. Record the depth measurement for each chamber and you can average the amount to mill off the surface. No guessing and you can get it where you want in one cut.
