I looked at the NHRA classification and see the high end weight of 2808. I also was looking at the Boss 302 and see it hasnt been re-classified since 2002, would this be a viable option or would the HP rating of 295 kill the idea of running the car around 2700-2900lbs ?

The Boss 302 engine in the Probe can run
GT/B @ 2677 Lbs GT/C @ 2825 GT/D @ 2972 GT/E @ 3120 GT/F @ 3267 295 HP seems a little high for that engine, but it might work if you can find the heads without selling your soul. You can also write a letter to NHRA asking for a HP reduction on the engine which might be looked on favorably since there don't seem to be any running in competition right now. They might drop it to 287 or so on request. Do you have a Probe suitable for RWD conversion? It's not going to be cheap to build.
